The most common mistake after a fire is treating the smell as the problem. It is not. The smell is a symptom of fine particulate, soot and combustion residue, that traveled on the air currents during the fire and settled into porous surfaces, inside cabinets and wall cavities, and through the HVAC system. Spraying a fragrance over that particulate does nothing to the source; it just adds a second smell on top of the first, and both come back.

Effective deodorizing has to reach where the smoke reached. Thermal fogging works precisely because it pairs a deodorizing agent with the same particle behavior the smoke followed, penetrating the cavities and porous materials that ordinary surface cleaning never touches. Hydroxyl and ozone treatment then neutralize residual odor compounds in the air. Before any of that, the soot itself has to be physically removed with the correct method for each surface, because protein residue from a kitchen fire smears under the wrong technique and lifts cleanly under the right one.

This is also why a fire job cannot be judged from the burned room. Rooms that never saw flame can hold as much odor-causing particulate as the room that did, carried there by the same air that moved the smoke. A restoration that only addresses the visible damage leaves a house that looks repaired and still smells like the fire. The standard worth holding a contractor to is simple: the structure should read as pre-loss, not as a masked version of the damage.
